Eggstra!

Over the past week, we’ve made our first round of egg sales. Our girls are really ramping up – many of our pullets have come into laying over the past couple of weeks, and for this, we are grateful! We’re really proud of the eggs they are producing, and enjoying them ourselves. The eggs are just so much tastier, and have more mass to them, than those we used to buy in the store. And, of course, there are the studies that Mother Earth News has conducted, which have found that truly free-ranged/pastured eggs contain better nutrition, with, on average, as compared to the USDA standards for store-sold eggs:

• 1/3 less cholesterol
• 1/4 less saturated fat
• 2/3 more vitamin A
• 2 times more omega-3 fatty acids
• 3 times more vitamin E
• 7 times more beta carotene

We’re so excited to be able to play a part in making local, sustainable food available to our community, particularly when there are so many valid concerns about foods produced on factory farms. Our personal goal of living a more self-reliant lifestyle is something we work toward every day, inch by inch, and it is so fulfilling to be able to share the fruits of those labors with others, which in turn, helps us to grow our farm so that we can offer more in the future. I envision the day when we have a high tunnel and a creamery here on site, so that we have vegetable, fruit, and cheese/dairy offerings available as well! Those things will take time, and let’s be honest, quite a bit of money, but being able to produce food with control of what goes into it is such a worthwhile task. I think it’s so important that we all get back in touch with our food supply, and I want to play a role in making it possible for those who can’t farm to be able to obtain high quality, sustainable foods from a grower that they know and trust.
