It’s been a Chaos Circus around here of late – as I Tweeted yesterday – I have realized that I have a Möbius To-Do List. Just as I think I’ve gotten to the end of it – it just loops back around. I’ve come to terms with that – but I must apologize for the lack of content here while I circle around that thing!

We’ve been busy over the past few weeks with new goat acquisitions, as I’ve mentioned in previous posts. Now we are busy getting our girls bred for the Spring so that we have new goat babies and milk! Our six does we are currently milking will have their supply “refreshed” – and the five ladies who are maidens (never bred in the past) will come into milk for the first time.

I’ve been making quite a bit of cheese with our goat’s milk for the past several months. In fact, George and I made a batch yesterday – some Brousse – a traditional cheese made by farmers in the south of France. It is similar to chèvre in texture, but has a simpler process in producing it. He took it in for his company holiday pot luck lunch today, and there are three flavors: Zesty Garlic Herb, Smoked Paprika, and Fresh Basil, Olive Oil & Garlic. I’m hoping that they are enjoyed!

It is our dream to build a creamery facility here on our property and to be able to make cheeses for retail sale.  It’s going to take time to get there, but we really hope to achieve it. What is life without dreams, right?

We’re going to be trying our hand at making a farmstead Cheddar cheese in the near future – it will need to age for at least a month. Goat’s milk can be used to make lots of different types of cheeses, although it does work more ideally for certain types  – this Cheddar should be interesting. Our herd has a high butterfat content in their milk, so we are hoping for good results!

We’ve had a lot of interest in our duck’s eggs of late, too – we are happy that the eggs are being enjoyed so much! Our chickens and ducks are all continuing to produce even in the cold weather (the numbers do decrease somewhat, but not completely!)
