Duck Recipes

As you may know, we raised a flock of Pekin ducks this Spring, and they were just processed on June 1st. We have a lot of duck in the freezer now, and so I’m looking for great recipe ideas!

We haven’t really had duck here before, but we know that crispy skin seems to be one of the most recommended aspects of many recipes. The Hungry Mouse blog has a fantastic looking recipe for roasting a duck with the objective of achieving that much-desired crispy skin. I think I’ll be giving Jessie’s recipe a try on my first attempt – it’s very similar to a recommendation given to me by Matt, one of our farm customers, who said that his only regret was having to share the resulting delicious meal with anyone else! Ha!
